Once your eggs are hard-boiled, they can last in the fridge for up to a week – as long as the shells are still on. If they aren’t eaten within the week, it might be wise to dispose of them. To make it easier to peel the shell, use eggs that aren’t super fresh – use the ones that are sitting upright in a glass of water. If the egg is really fresh, it will just make it harder to remove the shell. Lastly, cool your eggs as quickly as you can, as this helps prevent a green line from forming around the yolk.
