4. Hard Boil Eggs on the Clock

As soon as you reach a rolling boil, remove the pot from the heat and let the eggs sit in the hot water for 12 minutes (for large eggs). After the eggs have sat for 12 minutes, run them under very cold water until the eggs are cool to the touch. If you are cooking with extra-large eggs, let them sit for a few minutes longer (like 14 minutes). Remove the pot from the heat and let the eggs sit for 3 to 5 minutes if you want soft boiled eggs. If you like your eggs somewhere in the middle, let them sit for 7 to 8 minutes. Experiment!
